Olive oil cultivars
The cultivar are nothing more than the cultivar varieties of oil olives. They have been selected over millennia by oil producers who have dedicated themselves to identifying the plants with the best genetic characteristics in terms of resistance to disease and climatic adversities.
The cultivars that predominate the harmonious taste of our oil are: Nocellara del Belice, Biancolilla, Moresca and Giarraffa, these cultivars have not been chosen at random but represent the olive trees that are traditionally present in our territory and whose blend of olives produces an oil rich in polyphenols with excellent organoleptic properties.

Today olive groves are cultivated according to the sustainable agriculture model, meaning all agricultural techniques that respect water resources, soil fertility and biodiversity.
The harvesting is done strictly by hand the first ten days of October when the olives begin to change color from green to black, in this way you get a fruity oil with high antioxidant you can.
